Brunch On The Fly

"Youvcould totally open our own brunch spot ya know." They were definitely not wrong. I bet I totally could, since I clearly know how to whip up a banging brunch meal on the fly! I made us some whole wheat French toast waffles, topped with balsam infused maple syrup, with some over easy eggs, cracked over a bed of garden fresh veggies and spinach, topped with a sprinkle of cheese and fresh cilantro. I think it's safe to say that anyone who visited my brunch spot would undoubtedly leave stuffed and satisfied.
